Wednesday’s World Premiere Video: Bake Bethesda a Pie!

Divabetic SummerThe happy healthcare host, Mr. Divabetic presents the roving red tomato carpet at the 3rd Annual ‘Bake Bethesda a Pie’ Contest at Central Farm Market in Bethesda, MD.  His goal is to show people living with, at risk and affected by diabetes that having diabetes doesn’t prevent you from enjoying a wide variety of foods. Learn to eat well-balanced meals in the correct amounts, stay fit, and take your prescribed medications, and you can thrive with diabetes.

Special guest, Kathy Gold RN, MSN, CDE, Director of Outreach and Education at the Diabetes Research & Wellness Foundation in Washington, DC helps to raise awareness for diabetes in a fun and glamorous new way.

Over the Labor Day weekend, thirty-three fruit and veggie loving amateur bakers brought their best efforts —ranging from butterscotch and fig to peach and prosciutto, with lots of berry pies in between.

In the blind tasting, judges Joseph Poupon of Patisserie Poupon, Catherine Gewertz of CurvyMama Pies and Carole Sugarman from Bethesda Magazine rated each pie numerically on appearance, taste and overall impression. Prizes were awarded to all the winners but the event is also a fundraiser for the Manna Food Center, Montgomery County’s food bank. #centralfarmmarkets

A Quick Way to Add More Veggies To Your Day!

Divabetic SummerMost of us just aren’t eating enough fruits and vegetables.  Rich in vitamins, nutrients, antioxidants, fiber, and water, it’s hard to understand how so many can resist that gorgeous nutritional profile. If you’re failing to get your 5 A Day, here’s one tip to help you eat more fruits and veggies:

Why not try replacing one bread serving a day with a fruit or vegetable?  You’ll be a step ahead if you switch from white bread to a  lettuce wrap. Instead of bread or tortillas, make your next sandwich, burger or wrap inside a leafy green. Stack 2 or 3 large, leafy greens such as Bibb lettuce, romaine, red lettuce, cabbage, or radicchio and pile on the fixings. Enjoy the added crunch factor.  It’s great way to cut back on your carbs  intake too.

Would You Choose to ‘Serve, Taste or Trash’ a Melon???

See if other people share the same sentiments you do about similar fruits and vegetables. You might be surprised by the results.  In the game, you’re given three choices of fruits and vegetables. You must decide which one you’d serve, which one you’d taste and which one you’d trash.

Would you TRASH a melon? Honeydew is part of the muskmelon family, along with cantaloupe and person melon. This family is also known as netted melon; their skin looks like its covered with a thick, rough netting. Honeydew is very aromatic, but if they’re picked too early they won’t become as sweet and flavorful.

Melon is thought to have originated in Persia and was also prized years later by ancient Egyptians. Today honeydew is grown in Mexico, California, Arizona, and parts of the southwest and is most abundant from late summer through early fall.

One cup of diced honeydew has 61 calories, 15 grams of carbs and 5% of your daily recommended dose of fiber and 51% of your daily recommended amount of vitamin C.   This melon also haspotassium, folate, vitamin B6, and vitamin K.

Choose honeydew melons that are firm-but-not-hard and have a nice floral smell. Compare melons and select those that are heavier for its size—the heavier it is, the juicier it will be. Knock on a melon and listen for a deep, thick sound which will tell you if it’s ripe. Store whole melon at room temperature for 2 to 4 days. Once sliced, wrap and refrigerate for up to 5 days.

If you choose to serve melon why not turn it into smoothies, juice, granita, sorbet or soup? Pair sweet honeydew with more savory food like prosciutto or chicken or add it to a veggie salad (honeydew-cucumber salad anyone?).

Are You A Veggie Hater?

Divabetic SummerVegetables are one of those foods people either love or hate. The problem with hating our green friends is if you aren’t eating vegetables, your diet’s lacking in fiber and antioxidants. Like Mom always said, “they’re good for you!”

So what’s a veggie-hater to do? Before you decide to “trash” a veggie for good, why not try to eat it raw? Raw veggies can be more appetizing than their cooked counterparts to people who aren’t crazy about vegetables. The flavors of raw veggies can be milder than those of cooked ones. And the texture is crispy, rather than mushy.

Sweet Potato is a Superhero in Africa

Divabetic SummerA revved-up sweet potato engineered to contain more vitamin A is a promising new tool in the fight against malnutrition in Africa.

Nature writes that HarvestPlus, which is funded by the Consultative Group for International Agricultural Research (CGIAR), cross-bred Africa’s white and yellow sweet potatoes to create an orange-toned variety rich in beta-carotene, which converts to vitamin A in the human body. The potato is also more tolerant to drought that either of its genetic parents.

HarvestPlus researchers distributed orange sweet potato vines to more than 10,000 farming families in Uganda. Results published last week in the Journal of Nutrition showed that households that grew the crop experienced excellent effect.

Vitamin A deficiency can lead to blindness, compromised immune systems and even death. HarvestPlus notes that up to 500,000 preschool children go blind from lack of vitamin A every year, two thirds of which die within months of losing their sight.
