Our Mr. Divabetic’s good friend and colleague, Chef Robert Lewis aka ‘The Happy Diabetic’ joins the podcast to help tempt the world’s most picky eaters to eat more fruits and vegetables.  Chef Robert Lewis’ recipes celebrate great-tasting food that both diabetics and non-diabetics can enjoy. His cookbooks are filled with tips, tidbits, and humorous anecdotes that he hopes will make cooking fun! “You are not what you eat, you are how much you eat!,” says Chef Robert Lewis. Here’s one of Chef Robert Lewis‘ recipes featured on April’s upcoming Serve, Taste or Trash! Game podcast: Kale Chips With Sesame Seeds

Serves 4-5 as a snack

What’s in it?

Large bunch of kale, washed and fully dried

Olive oil (you’ll probably need at least 2 Tbsps)

Sea salt to taste (approximately ½ teaspoon)

Sesame seeds to taste

Let’s put it togather

1. Preheat oven to 300 degrees F. Remove the leaves from the center rib of the kale and tear them into large pieces.

2. Place leaves in a large bowl and drizzle with olive oil, salt and sesame seeds and toss until completely coated.

3. Divide the kale leaves between two heavy-duty baking sheets and arrange in a single layer. (Many recipes call for you to line the sheets with parchment paper but it’s not necessary unless you are really skimping on the oil – my chips did not stick at all.)

4. Bake for 25 minutes, or until crisp – the cooking time will depend somewhat on the thickness of the leaves and the size of the pieces. You can eat them as soon as they’ve cooled down enough to grab.

Whitney Houston-inspired ‘It’s Not Right But It’s O-Kale’ Recipe

Divabetic SummerWhitney Houston‘s death was a huge blow for music fans worldwide, but the iconic singer is not forgotten.

Divabetic believes the superstar’s legacy serves as an amazing source of inspiration for women living with diabetes to stay healthy and upbeat about their self-care.

“We feel Whitney songs and films can inspire the inner divas in women living with diabetes to make better choices about food, fitness and self-care,” says the happy healthcare host, Mr. Divabetic.

Throughout Divabetic’s free podcast, Diabetes Roundtable Inspired by Whitney Houston, there are plenty of references to Whitney’s hits to celebrate the singer’s spirit in a upbeat and healthy way. The song, “It’s Not Right But It’s Okay” is playful changed to “It’s Not Right But It’s O-Kale” to help sing the praises of the vegetable,  kale in the show’s popular segment, Food Aisle Face-Off with Judi Wilcox, RD, CDE.  Judi is a registered dietitian, certified diabetes educator, food stylist and herbal tea manufacturer. Here’s Judi Wilcox’s recipe to you celebrate the ‘The Queen of the Night’ at your next meal:

It’s Not Right But It’s O-Kale Recipe by Judi Wilcox RD, CDE  for Baked Kale:

  • 1 tablespoon olive oil
  • 1 bunch kale
  • 1 teaspoon seasoned salt

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper.
  2. With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.
  3. Bake until the edges brown but are not burnt, 10 to 15 minutes.

Customize your meals the same way you’d customize a new computer or car and you’ll be able to eat more of your favorite foods without the regret.

Know the nutrition facts when you  choose your ingredients.  You can start with turkey instead of roast beef and cut calories in half right there.  Choose an ounce of Jarlsberg  lite over cheddar and save another 46 calories.

Don’t be afraid to add ingredients. It’s always more fun to add, and besides, adding can be good for you. For instance you can add yummy fresh vegetables to a sandwich to bulk up on fiber and nutrients in exchange for some of the more fattening choices.  Add your favorite mustard (there’s so many great one’s to choose from) to any sandwich instead of mayo and save another 90 calories and 10 grams of fat.

Oh, and the skinny margharitas allow for some well needed relaxation without piling on the calories of regular sweet mixed drinks–just beware of how many, or that consciousness will be out in the ocean

 

Foods That Fight Allergies

Feeling stuffed up from allergy symptoms? Try changing your diet to include foods that might help.

“An overall healthy diet is helpful for controlling all conditions, including allergies,” says Leonard Bielory, MD, chairman of the integrative medicine committee for the American College of Allergy, Asthma & Immunology (ACAAI) and a professor at Rutgers University. Recently, research has suggested that certain foods can help fight allergies by controlling underlying inflammation, dilating air passages, and providing other relief effects.

A recent study found that a heart-healthy Mediterranean diet, featuring nuts, grapes, oranges, apples, and fresh tomatoes, could provide allergy relief.

Hungry Girl Bites Into A New TV Season

Divabetic Loves Hungry Girl

It’s a been a busy frew years for Lisa Lillien, known as “Hungry Girl.” She has put out four best-selling cookbooks, has about 1, 000,000 subscribers to her aily newsletter and is in the second season of her cooking show, “Hungry Girl,” airing on Food Network.

If you’re not familiar with Hungry Girl, she is a hyperkinetic 43-year-old former TV producer named Lisa Lillien, who once upon a time hated the fact that she couldn’t fit into her skinny jeans. “I was that person who would sit at the computer and eat an entire bag of fat-free pretzels and think I was doing a good thing,” Lillien says. “I wasn’t.”

Lillien grew up on Long Island.  She lost 25 pounds several years ago, and in 2003 she started sending her friends low-fat recipes and tips for finding healthful food in mainstream supermarkets. She then turned herself into a cartoon character on the Internet called Hungry Girl.  Wow, that’s a diva move! 

What we love, love, love about her is that her best-selling cookbooks are for people who don’t really cook! Lillien feels that she (and all of us) can lose weight while still eating her favorite foods — or at least some version of them. Hungry Girl recipes approximate the foods Lillien knows her adherents (mostly women) crave, such as fried calamari, onion rings and that totem of post-feminist gastronomic fetishes: cute cupcakes.
