Can Coconut Oil Prevent Cavities?

Divabetic SummerCoconut oil could prevent cavities, a new study suggests.

Researchers from the Athlone Institute of Technology in Ireland found that enzyme-treated coconut oil – similar to what would happen to coconut oil after it’s been digested — was able to stop the growth of cavity-causing bacteria.

The finding, presented at the Society for General Microbiology’s conference, could lead to a new approach to dental care products, study researcher Dr. Damien Brady said in a statement.

“Incorporating enzyme-modified coconut oil into dental hygiene products would be an attractive alternative to chemical additives, particularly as it works at relatively low concentrations,” Brady said in the statement. “Also, with increasing antibiotic resistance, it is important that we turn our attention to new ways to combat microbial infection.”

McDonald’s Plans To Open Vegeterian Restaurant

Divabetic SummerWow, talk about shocking!!! Can you believe McDonald’s is planning to swap the burgers for potato sandwiches when it opens two new vegetarian restaurants in India next year?

That’s right, we said, “VEGETARIAN”

McDonald’s already keeps beef and pork products off the menu in India where a majority of the population are Hindus and Muslims. McDonald’s sells Chicken McNuggets and fish burgers in its regular Indian outlets although its traditional beef burgers aren’t available. The cow is sacred to religious Hindus, who don’t eat beef.

The attempt to draw religious Indians shows how the Golden Arches is boosting sales by catering to local tastes outside its home market. The vegetarian restaurants will include offerings such as the McAloo Tikki burger, a sandwich with a mashed-potato patty and the Pizza McPuff, a vegetable and cheese pastry,

India, the world’s second most populous nation, is important for McDonald’s as it increases sales overseas. The country’s large population, growing urbanization and increasing number of people joining the workforce may help the fast-food industry expand from 47 billion rupees ($840 million) in 2010 to to 146 billion rupees in 2014, according to estimates by researcher RNCOS E-Services Pvt.

Over the Labor Day weekend, thirty-three fruit and veggie loving amateur bakers brought their best efforts —ranging from butterscotch and fig to peach and prosciutto, with lots of berry pies in between.

In the blind tasting, judges Joseph Poupon of Patisserie Poupon, Catherine Gewertz of CurvyMama Pies and Carole Sugarman from Bethesda Magazine rated each pie numerically on appearance, taste and overall impression. Prizes were awarded to all the winners but the event is also a fundraiser for the Manna Food Center, Montgomery County’s food bank. #centralfarmmarkets

Savory ‘Stir-fry In Seconds’ Recipe from Monique Gordon

Divabetic  SummerThe happy healthcare host, Mr. Divabetic asked one of his favorite Philly divas, Monique Gordon, to share a sensational recipe for cooking vegetables. Monique’s an avid fan of our ‘Serve, Taste or Trash’ video series and would like to help inspire others to ‘taste’ not ‘trash’ their fruits and vegetables.

” I’m not devoted to the stove when preparing meals. My meals have to be prepared in thirty minutes or less, and appealing to the eye when served. I try my best to use the least amount of pans, containers, and utensils except when necessary (when preparing cheese, meat, and fruit). ‘Create as you go’; is my motto. I make it a point not to overcook or over season dishes. There’s nothing worst than eating slimy veggies, fruits, beans etcetera swimming in murky sauce.”

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: Serves 2-3 as a vegetable side dish

Savory Stir-fry In Seconds

Ingredients:

  • ¼  cup chopped scallions
  • 2-3 cloves garlic, minced or finely chopped
  • 1-2 thumb-size ginger, sliced into thin toothpick pieces (optional: use 2 tbs. of pickled ginger)
  • ½  to 1 small fresh red chili, sliced, OR ¼  to ½  tsp. chili flakes
  • 1 of each green, red, yellow, purple bell pepper, sliced into strips (usually found at local farmer’s market)
  • 1 small bunch a Swiss chard cut in thirds or beet tops
  • 2 cups cucumbers thinly sliced
  • Handful fresh Thai basil
  • 2 Tbsp. coconut oil or canola oil
Sauce:
  • 2 sheets of sea vegetables (crumble into small pieces)
  • 2 ½  Tbsp. tamari sauce ( San-J Organic Gluten & Wheat Free)
  • 3 ½  Tbsp. fresh lime juice
  • 1 ½  Tbsp. soy sauce (San-J Organic Gluten & Wheat Free)
  • ⅓  to ½  tsp. dried crushed chili or chili flakes
  • ½ cup dice fresh mango or peach, or 2 ½ tsp of peach, apricot, or orange preserves sweeten with fruit juice.

Preparation:

Supplies: 1 small bowl, 1 large bowl, a sharp knife or chopper, a wok or large cast iron pan, and a saucer and spoon for tasting

Note: Rinse (don’t wash or soak) all veggies and fresh herbs before cutting. Washing and soaking veggies depletes them of nutrients.

Sauce:

Combine all ingredients in a small bowl. Stir well.  Taste the sauce, for spicy, then salty, followed by sweetness. Add more lime juice if too sweet or salty, however, it will be less salty once you add it to the vegetables.

Stir-fry:
  1. Warm a wok or large cast iron frying pan over medium to high heat. Cast iron pans absorb oil, so you might have to use more. Add oil and swirl around with a pastry brush, then add the scallions, garlic, ginger, and chili. Stir-fry 2 minutes, then add the bell peppers. Also add ⅓ of the stir-fry sauce. Continue stir-frying 2-3 minutes.
  2. Add the Swiss chard and red pepper and another ⅓ of the stir-fry sauce then simmer vegetables about 2 minutes.
  3. Finally add the cucumbers. Add more of the stir-fry sauce as needed, enough to just cover vegetables in sauce. Simmer 2-3 minutes more. Make sure the cucumbers are still crisp and bright green.
  4. Remove from heat and taste (with a clean spoon of course). Add soy sauce, lime juice, or preserves until you reach the desired taste.  Top with fresh basil and serve over rice noodles or rice (brown or white).
Note: You can add mushrooms, onions, carrot, broccoli or any other vegetable that peeks your palate. Creativity is the key.  2010©Monique A. Gordon

A Quick Way to Add More Veggies To Your Day!

Divabetic SummerMost of us just aren’t eating enough fruits and vegetables.  Rich in vitamins, nutrients, antioxidants, fiber, and water, it’s hard to understand how so many can resist that gorgeous nutritional profile. If you’re failing to get your 5 A Day, here’s one tip to help you eat more fruits and veggies:

Why not try replacing one bread serving a day with a fruit or vegetable?  You’ll be a step ahead if you switch from white bread to a  lettuce wrap. Instead of bread or tortillas, make your next sandwich, burger or wrap inside a leafy green. Stack 2 or 3 large, leafy greens such as Bibb lettuce, romaine, red lettuce, cabbage, or radicchio and pile on the fixings. Enjoy the added crunch factor.  It’s great way to cut back on your carbs  intake too.

Huge Surge in Farmers Markets Across America

Divabetic SummerGreat news for fruit and veggies lovers! The U.S. Department of Agriculture announced that the number of direct-sales markets has increased 9.6 percent in the past year, with California and New York leading the way. (Mr. Divabetic can’t wait to visit each of them in his world famous fruit suit!) 

“Farmers markets are a critical ingredient to our nation’s food system,” USDA Deputy Secretary Kathleen Merrigan said. “These outlets provide benefits not only to the farmers looking for important income opportunities, but also to the communities looking for fresh, healthy foods.”

After 18 years of steady increases, the number of farmers markets across the country now registered with the USDA is 7,864. In 1994, there were 1,744.

Some markets are so popular that there are wait lists for farmers to sell there, including one of the largest and most diverse of all, the Ferry Plaza Farmers Market in San Francisco. Farmers from across the region travel there three days a week to sell fruits, vegetables and artisan breads and cheeses to thousands of shoppers, including top chefs from the food-centric city.

The USDA has worked to make the markets accessible to people of all income levels by outfitting more with the ability to accept payments from the Supplemental Nutrition Assistance Program, formerly known as food stamps. More than $4 million is being made available to equip markets with wireless point-of-sale equipment.

California, the country’s top agricultural producing state, has 827 markets, according to the USDA. New York has 647, more than double the next most prolific state, Massachusetts, which has 313.

The mid-Atlantic, Northeast and Southeast saw the biggest percentage growth in markets, reporting 15.8, 14.4 and 13.1 percent jumps in participation.

Learn How to BEET Heart Disease Today

Divabetic SummerWant to give yourself better odds of remaining sharp in later years? Add some beets to your anti-Alzheimer’s arsenal.New research suggests beets could help increase blood flow to the brain .

Researchers from Wake Forest University had 14 seniors (70 years old and up) drink either 16 oz. of beet juice or eat a control diet in the morning for two days, then used MRI machines to measure blood flow to the brain. The groups switched diets for another two days, then were tested again. The result: The beet-juice drinkers enjoyed 21% increased blood flow to the frontal lobes — sensitive areas of the brain vulnerable to the degeneration that leads to dementia. “I think these results are consistent and encouraging — that good diet consisting of a lot of fruit and vegetables can contribute to overall health,” said Gary Miller, Ph.D., a senior investigator on the project.

Just how do beets benefit the brain? They are a top source of nitrates, which when converted to nitric oxide actually expand veins and arteries, allowing more blood to flow and carry oxygen to the brain…and to muscles, as well. This may be why beet juice helped boost stamina, allowing athletes to cycle a minute and a half longer at high intensity in one study. Beets also contain betanin, a compound that may help keep LDL (“bad”) cholesterol in check. One-half cup of cooked beets has only 37 calories and provides a good source of folic acid, manganese and potassium.

Bonus: Eat smart to stay smart. Harvard Medical School researchers found that middle-aged women who ate the mostleafy greens and/or cruciferous veggies were more likely to maintain mental acuity in later years.

Chef Robert Lewis The Happy Diabetic’s Sizzling Summer Recipe

Divabetic SummerWhether you are newly diagnosed, or  have been living with diabetes for decades, Mr. Divabetic‘s favorite chef, The Happy Diabetic can show you how to eat well and have fun cooking at the same time. Rather than obsess over the list of foods you love but cannot have, Chef Robert Lewis focuses on showing you many fabulous, good-tasting, and healthy foods you can (and should) eat!

Hate vegetables? Well, in honor of the Mr. Divabetic‘s world famous fruit suit, Chef Robert Lewis took the challenge of sharing a recipe for ‘cabbage’ that everyone at your family reunion will enjoy.

Roasted Cabbage with Bacon 

Ingredients: 1 head of cabbage, 6 slices of bacon, salt , balsamic vinegar and 1 tablespoon of pine nuts

Preparation:

Preheat oven to 450 degrees.

Peel off 2-3 of the outer layers of cabbage.  Cut in half and then cut in half again and then repeat.  You should and up with 8 small wedges.  Lay some foil on a baking pan and top with the wedges.  Sprinkle each cabbage with salt. Slice each bacon in half and then lay on the top of the cabbage.

Place in the oven for 25 minutes and then remove.  Sprinkle the pine nuts onto the foil so that they toast. Place back in oven for 3-5 minutes or until everything is brown.  Remove and drizzle each wedge with balsamic vinegar.  Plate the wedges with a few pine nuts or chop everything up and place in large bowl. Enjoy!
