A new survey from market research firm the NPD Group finds that America is cutting gluten out of its diet in a big way. Just under one-third of 1,000 respondents agreed with the statement: “I’m trying to cut back/avoid Gluten in my diet.”
So what is gluten?
Gluten is a combination of the natural proteins found in wheat, and to much a lesser extent, in rye and barley. Gluten is developed when flour is moistened and then either kneaded or mixed. When this happens, the gluten molecules literally stretch out.
Then, the gases produced by yeast or another leavening agent inflate these gluten molecules like little balloons, which is what permits doughs to rise. Finally, when the dough is baked, the gluten hardens, giving the bread its structure.
Gluten is also a key component in foods that aren’t baked, like pasta. The gluten is what gives the pasta its firm texture. Strong flours such as those made from durum wheat are good for making pasta because of their high gluten content. Pasta made from low-gluten flour would be too soft and mushy.

A New York City elementary school has adopted an all-vegetarian menu, serving kids tofu wraps and veggie chili.Public School 244 is the first public school in the city to go all-veggie. The animal-welfare group People for the Ethical Treatment of Animals says it might be the first all-veggie public elementary school in the nation.
Schools Chancellor Dennis Walcott says he’s proud of the “trailblazing” school.The Queens school has 400 students in pre-kindergarten through third grade. It wanted to offer healthy food options and started serving a vegetarian lunch three times a week and then increased it to four times a week. It recently went all-vegetarian.Principal Robert Groff said Tuesday the kids gravitated toward veggie offerings, including black beans and cheddar quesadillas served with salsa and roasted potatoes.

Serves 4-5 as a snack
What’s in it?
Large bunch of kale, washed and fully dried
Olive oil (you’ll probably need at least 2 Tbsps)
Sea salt to taste (approximately ½ teaspoon)
Sesame seeds to taste
Let’s put it togather
1. Preheat oven to 300 degrees F. Remove the leaves from the center rib of the kale and tear them into large pieces.
2. Place leaves in a large bowl and drizzle with olive oil, salt and sesame seeds and toss until completely coated.
3. Divide the kale leaves between two heavy-duty baking sheets and arrange in a single layer. (Many recipes call for you to line the sheets with parchment paper but it’s not necessary unless you are really skimping on the oil – my chips did not stick at all.)
4. Bake for 25 minutes, or until crisp – the cooking time will depend somewhat on the thickness of the leaves and the size of the pieces. You can eat them as soon as they’ve cooled down enough to grab.

Grilled Skewers of Sausage, Orange and Peppers by Chef Robert Lewis
What’s in it?
18 ½ inch chunks of green and red peppers
1 1/2 medium-size onions, cut into 18 wedges
6 links sweet Italian sausage, each cut in 3 pieces
1 orange, unpeeled, cut in 12 chunks
2 tablespoons extra virgin olive oil
Let’s put it togather
1. Soak 12 8-to 10-inch wooden skewers in tepid water for 30 minutes. Drain.
2. Preheat a charcoal or gas grill or oven to 350 degrees.
3. Hold two skewers parallel to each other about a half-inch apart. Place a piece of onion, a pepper chunk, a piece of sausage and a piece of orange on the two skewers, repeating the ingredients in this order and ending with a piece of sausage. There should be three pieces of sausage per double skewer.
4. Brush each skewer with olive oil, and place on the hot grill or oven. Cook, turning occasionally, until the sausage is browned and the oranges and onions slightly charred, about 20 minutes.
Yield: 3 servings

Here’s one of Chef Robert Lewis aka ‘The Happy Diabetic’s recipes, Roasted, Caramelized Jerusalem Artichoke…of Love, featured in ths episode of Serve, Taste or Trash! Game podcast:
Ingredients:
1/2 lb Jerusalem artichoke peeled and cut to a uniform size
1 tablespoon olive oil
2 cloves garlic minced
1 teaspoon butter
2 tablespoon fresh chopped parsley
1/4 cup roughly chopped chives
Directions:
Wash and scrub the artichokes
Toss the Jerusalem artichokes in the olive oil in a roasting pan large enough to hold them with space in between the pieces. Scatter in the garlic and roast in a preheated 400º oven until tender, about 30 minutes, tossing at least once about halfway through.
Add the butter and parsley and chives and toss to coat. Season with salt and hot sauce and serve immediately.

The Broadway diva shares her secrets for eating right and moving more with Mr. Divabetic on the Mr. Divabetic Show podcast in spite of a demanding schedule to inspire you to perform at your best too.
There’s plenty of talk about diabetes, a disease that affects an estimated 26 million Americans.
But there’s an even bigger group of people who have health professionals equally concerned – those who don’t yet have the disease but who live with blood sugar problems that are likely to develop into diabetes in five to seven years if left untreated.
Problems with impaired glucose tolerance also are known as pre-diabetes, and more than 79 million Americans fall in this group.
Diabetes Prevention Program (DPP) study conclusively showed that people with pre-diabetes can prevent the development of type 2 diabetes by making changes in their diet and increasing their level of physical activity. While the DPP also showed that some medications may delay the development of diabetes, Kirsten and others have found that diet and exercise worked better. Just 30 minutes a day of moderate physical activity, coupled with about a 7% reduction in body weight, produced a 58% reduction in diabetes.
